How to Make Tea: The Science Behind the Leaf (How to Make Series), by Brian R. Keating, Kim Long

How do you like your tea? An ethereal infusion, the ghost of a scent walking across your taste buds? Or a mug of traditional brew, so strong that a spoon can stand up in it? We’ve been drinking tea for thousands of years, yet few of us realise that all tea – from elegant lapsang to pungent pu-erh – come from the same source. The taste is down to science: geography, chemistry and physics, the application of heat and pressure, and the magic of time and enzymes. How to Make Tea offers a thorough grounding and lays out the principles for the tea-loving nonscientist: learn how to extract the best from every cup.

A serviceable kitchen tome
By Jennifer L. Berger
I picked this up at my local tea & spice emporium -- quite an informative little book for the tea n00b in your life who's interested in developing a taste for tea but might feel like it's too fussy or doesn't know where to start. However, if you've hung out at Teavana for any length of time, you'll have picked up about half this book just from talking to the sales associates. The other half is mostly tea lore, which will add some color to your existing tea knowledge...but only a little. For a more vivid illumination, I'd skip this book and find an old copy of James Norwood Pratt's "New Tea Lover's Treasury." Still, if a practical manual you can keep on the kitchen counter is all you (or someone you know) need, this little tome fits the bill beautifully. Content is straightforward in plain language -- neither florid nor terse. Diagrams & illustrations are clear and informative (and used sparingly). If you need to make some choices about what you like & how you like it, this book will help clear a path for you, saving you money while you develop your palate.

I like the style of this book as well as the content. It's a very aesthetically appealing read and has great information about tea, the chemicals in tea, planting, harvesting, history... it's a great book for any tea drinker and any one who might be thinking of growing their own
